Le tecniche di conservazione e trasformazione della materia permettono non solo l’utilizzo in eccellenza dello stesso ma anche metodi per evitare gli sprechi: uno tra questi è la fermentazione, ma non è l’unico. La mia cucina ha come imperativo la sostenibilità perché il ritorno alle tradizioni è quello che mia nonna mi insegnava:
“non sprecare quello che faticosamente si raccoglie”
